What's in the Box? October 13, 2015

There was so much goodness in the share this week, I actually needed two boxes to haul it all home!

Here’s what was in my (two) boxes:

  • Broccoli
  • Daikon Radish
  • Cabbage
  • Dinosaur Kale
  • Kohlrabi
  • 2 Lettuce Heads 
  • Basil
  • Turnips
  • Tomatoes
     

And here’s what I’m planning on making with it:


Wednesday lunch

Raw veggie platter (kohlrabi, radish, turnip, and carrot) with humus and pita
 

Wednesday dinner

Warm quinoa, kale, avocado and tomato salad (thanks for the suggestion, Lori!)
 

Thursday lunch

Broccoli and bacon salad
 

Thursday dinner

Roasted chicken with roasted root vegetables and homemade pesto 
 

Friday lunch

Peck salad (leftover chicken, almonds, and Peck dressing)
Leftover roasted root vegetables
 

Friday dinner

Homemade tomato and basil pizza
 

Saturday lunch

Pear, walnut and blue cheese salad
