Kale, quinoa, and tomato salad

Both kale and tomatoes were in the share this week, so I thought it was the perfect time to try out this simple Autumn salad, recommended by CSA member Lori. Both vegan and gluten free, it was a big hit at the potluck dinner I took it to and made great leftovers for lunch the next day.

Kale, quinoa, and tomato salad

Ingredients:

  • 2 cups quinoa, cooked
  • 1/4 cup red onion, sliced
  • 1 cup grape tomatoes, cut in half
  • 1 avocado, diced
  • 1 tablespoon olive oil
  • Juice of 1/2 lemon
  • Salt and pepper

Method:

Sliced the kale into thick ribbons. Sauté kale in oil. Allow to cool. Mix together all ingredients. Chill and serve.
