Afternoon snacks are the low-point of my day. My kids are tired and hungry, and I am too tired and hungry to think about making them something healthy to snack on, while I am also busy planning ahead for dinner.
But the big, beautiful bunches of kale in the fall CSA share makes afternoon snacks a no-brainer for me. From a single bunch, I can make a heaping plateful of Disappearing Kale Chips and five tall glasses of our favorite Kale-Berry Smoothies. It takes 20 minutes to make, and it’s gone in 10. I just wish dinner were this easy!
- 2 cups loosely packed kale leaves (stems discarded)
- 1 cup frozen blueberries
- 1 cup frozen peaches
- 1 cup frozen strawberries
- 1 cup extra-thick homemade Greek-style yogurt
- 1 cup cranberry juice
- 1/4 cup raw honey
- 1 teaspoon pure vanilla extract
Combine all ingredients in a blender and liquify until smooth. Makes about48 ounces of smoothie.
