Kale Salad with Roasted Pine Nuts

Kale Salad with Roasted Pine Nuts


For the salad:

  • 1/2 kale share, chopped
  • 1/2 of a medium white onion, diced
  • 1 clove garlic, minced
  • 1 cup of toasted pine nuts (or whatever nut you like/have, walnuts are good, too)
  • 1 cup shredded Parmesan

For the dressing:

  • 1/2 cup olive oil
  • juice of two lemons
  • 1 tablespoon of Dijon mustard
  • salt and pepper to taste


Toss and enjoy! It’s as simple as that.
