A Simple Savory Breakfast
A simple breakfast is to coarsely chop two handfuls of greens (kale, arugula, spinach, beet, turnip, radish, chard, cabbage—the possibilities are endless) and place them in saucepan with a cup of your broth. Broth will not cover greens by any means. Heat to almost boiling, add two or three cracked eggs, place the lid on saucepan and simmer for a minute or two, depending how hard you like your yolks. This is also easy replicated at work if you have access to a microwave. Heat raw greens and broth for 3 minutes, then crack in eggs and cook another minute or two. This is also a great dish for using up leftovers; add in chopped tomatoes, bell pepper, ground meat, etc. Season to taste. It’s a great start to the day!
