CSA member Lauren Klimetz shared a recipe for a Paleo Pizza that makes great use of any arugula you might still have kicking around in your crisper. She found the recipe for the wheat-free pizza dough, made from coconut and arrow-root flour in the cookbook The Healing Kitchen. A similar recipe is available in detail here.

Paleo Pizza with Arugula
Make any pizza dough that suits you. (Lauren uses this one.) Chop 6 slices prosciutto, 1/2 cup figs, 1/2 cup grapes, and sauté until prosciutto is crunchy. Then wilt the arugula in the pan for a few minutes, and pile it high on the pizza before baking. Delicious!
