Summer's Salad with Goat Cheese and Fruit
- Lettuce from the CSA box
- Chopped roasted turkey or chicken breast
- Goat cheese (or feta works if you prefer)
- Sliced avocado
- Dried cherries
- Dried cranberries
- Pecans or Walnuts
- Fruit (usually strawberries, blueberries, blackberries, grapes, and/or chopped apples—whatever I have in the refrigerator)
I toss it all together, sprinkle the cheese on top, and drizzle white balsamic vinegar and olive oil (both from J. Olive in Oxford) on it.
