Bean-Free Zucchini Humus

“This is a wonderful alternative to traditional hummus,” writes CSA member Becky Fish, who share her recipe below.

Bean Free Zucchini Hummus


  • 4 cups peeled and diced raw zucchini
  • 3/4 cup tahini paste/sauce
  • 1/2 cup fresh lemon juice
  • 1/4 cup olive oil
  • 4 cloves garlic
  • 2 teaspoon kosher salt
  • 1 Tablespoon ground cumin
  • 1/4 teaspoon paprika
  • 1/8 teaspoon chili powder
  • 1/4 cup pine nuts (reserve a few for garnish)


Combine all of above ingredients in a blender and blend. Pour humus into a bowl and garnish with pine nuts, chopped roasted red pepper, paprika, and chili powder.
