Everyone’s got their favorite vegetables. This week’s share has all of mine. I simply cannot get enough fresh tomatoes, peppers, eggplant, cucumbers and potatoes. I like them so much I picked up an extra share’s worth this week—in addition to what my own garden is producing right now (more tomatoes, eggplants, and cucumbers!). 

The peak summer season only comes around once a year, and when it does, I gorge myself on all of my favorites: creamy cucumber salad, oven-baked, ratatouille, fresh salsa, roasted potatoes, tomato and mozzarella salads everyOf course, that also means I have been working double-time in the kitchen to stay ahead of all this ripe produce. Maybe it is a good thing that this season only comes around once a year…
