Think making pasta sauce is too much work? CSA member Melissa Boatman couldn’t disagree more. Her recipe for tomato sauce is so easy, you’ll wish you had been making it all season.
Easy Tomato Sauce
- 4-5 tomatoes, halved and roasted
- 2 bell peppers, halved
- 1 small onion halved
- 2-3 garlic cloves
- 1/2 teaspoon fennel seeds
- 6 basil leaves
- 1/8 -1/4 teaspoon crushed red pepper
- 1/8 teaspoon cinnamon
Place the tomatoes, bell peppers, onion, and garlic, cut side down, on a baking sheet lined with foil/parchment paper. Drizzle all items with olive oil and sprinkle with sea salt. Bake in preheated oven at 450 for 20-30 minutes. Let vegetables cool, then peel the tomatoes if desired. (Melissa leaves the skins on.)
After baking, dump entire sheet pan, including drippings, into a bowl and add the fennel seeds, basil leaves, crushed red pepper. and cinnamon.
Puree all ingredients together. Taste and adjust seasonings if needed.
Good to serve immediately over pasta or store 1-2 cup portions in gallon-size freezer bags for for up to 1 year.
